Frango de Churrasco
This is a simple and classic way of cooking meat on the skewer. Frango de churrasco is salty roasted chicken cooked on a skewer, spiced with hot red chili sauce, but you will find many skewer recipes using all kinds of meat.


3- to 3-1/2-lb. broiler-fryer chicken, halved
3  cloves garlic, quartered
2  tsp. salt
1/3  cup olive oil
1  lemon, cut into wedges


1. Over medium heat, heat 1 tablespoon oil in a medium saucepan

2. Add 1 cup chopped red onion (about 1/2 medium) and 2 cloves crushed garlic

3. Cook, stirring, until translucent, about 2 minutes

4. Add 1 cup long-grain white rice, 2 cups water and 2 teaspoons chopped fresh or 1/2 teaspoon dried rosemary

5. Simmer covered for 20 minutes

6. Salt and pepper to taste.
